Ingredients for the blender sardine pie:

Filling:

  • 1 large yellow onion, diced;
  • 2 Roma tomatoes, chopped;
  • 1 can (approx. 15 oz) whole kernel corn, drained;
  • 1 can (approx. 15 oz) green peas, drained;
  • 2 tablespoons sliced olives;
  • Fresh parsley and scallions to taste;
  • 2 cans (approx. 4 oz each) sardines, in oil;
  • Black pepper to taste;
  • Salt to taste.

Batter:

  • 3 large eggs;
  • 1 cup vegetable oil;
  • 2 cups whole milk;
  • 1 teaspoon salt;
  • 2 tablespoons cornstarch;
  • 2 cups all-purpose flour;
  • 1 tablespoon baking powder.

How to prepare the blender sardine pie:

Measuring cup used: 8 oz (240ml)

Pan dimensions used in this recipe:

  • 14 inches long;
  • 10 inches wide;
  • 2 inches deep.

Batter:

  1. In a blender, combine all batter ingredients except for the baking powder. Blend until smooth, then stir in the baking powder last.

Filling:

  1. In a mixing bowl, combine the chopped onion, tomato, corn, peas, olives, and fresh herbs;
  2. Add the sardines (including the oil from the can). If needed, clean the sardines by removing any bones or scales before mixing well;
  3. Season with black pepper and salt to taste.

Assembly:

  1. Grease a rectangular baking dish;
  2. Pour half of the batter into the dish and spread evenly;
  3. Add the sardine filling over the batter layer;
  4. Cover with the remaining batter;
  5. Bake at 350°F (180°C) for about 40 minutes.
