Creamy Cornmeal Cake

One of the most beloved classic cakes, you probably make this often at home. But today, we’re taking it to the next level with this incredibly moist and creamy cornmeal cake (bolo de milho cremoso). Brew a fresh pot of coffee—you’re going to need it!

Ingredients for Creamy Cornmeal Cake:

  • 1 can (15 oz) whole kernel sweet corn, drained;
  • 1 can of vegetable oil (use the corn can as your measuring cup);
  • 1 can of granulated sugar (measure using the corn can);
  • 1 can of fine cornmeal/polenta (measure using the corn can);
  • 4 large eggs;
  • 2 tablespoons all-purpose flour;
  • 2 tablespoons shredded unsweetened coconut;
  • 1 1/2 teaspoons baking powder.

How to make Creamy Cornmeal Cake:

  1. In a blender, combine the corn, oil, sugar, cornmeal, eggs, and all-purpose flour;
  2. Blend until smooth and creamy;
  3. Add the shredded coconut and baking powder, then pulse or stir gently until just combined;
  4. Preheat your oven to 350°F (180°C);
  5. Pour the batter into a greased cake pan;
  6. Bake for 40 minutes, or until golden and a toothpick comes out clean. Enjoy!

If you want to step outside the basics, try adding extra shredded coconut, chunks of guava paste (goiabada), or a sprinkle of parmesan cheese into the batter for a savory-sweet twist. You can also serve it with a dollop of cream cheese or a fruit-based glaze. It’s absolutely delicious on its own with a hot cup of coffee, though!

A great idea if you want a deeper flavor: substitute the all-purpose flour with more cornmeal or a specialized corn flour.
