Summer calls for ice cream, but if you’re trying to keep things healthy without skipping the treat, we’ve got you covered. This homemade recipe is super easy, guilt-free, and doesn’t compromise on flavor. Today’s delicious delight is our Passion Fruit Banana Ice Cream!

Ingredients for Passion Fruit Banana Ice Cream:

  • 3 ripe bananas, frozen (slice them before freezing);
  • 1 passion fruit (pulp extracted);
  • 2/3 cup (about 150g) plain yogurt;
  • 1 tablespoon vanilla extract.

How to make Passion Fruit Banana Ice Cream:

  1. Remember to slice the bananas and freeze them completely before starting the recipe;
  2. Add the frozen banana slices to a high-speed blender or food processor;
  3. Add the passion fruit pulp;
  4. Add the plain yogurt;
  5. Finally, add the vanilla extract;
  6. Blend everything together until smooth and creamy;
  7. If the blender struggles with the frozen bananas, add a little more yogurt, but be careful not to make it too liquid. The ideal consistency should be thick and creamy;
  8. Once smooth, transfer to a freezer-safe container and freeze for at least two hours, or until it reaches a scoopable ice cream consistency.

All done! Now, just serve and enjoy!

Serving Suggestions:

To elevate this ice cream, you can whip up a quick strawberry topping while it freezes. Simply chop a few strawberries, toss them in a skillet with a bit of turbinado sugar or honey, and simmer until it becomes a delicious syrup. Let it cool, and drizzle over your ice cream before serving—it’s phenomenal.

A bit about passion fruit:

Passion fruit is produced by plants of the Passiflora genus (primarily the Passiflora edulis species) in the Passifloraceae family. The plant, often called a passion vine, is common in tropical and subtropical regions of the Americas.

Also grown for its ornamental flower, Passiflora edulis is cultivated commercially for its fruit in the Caribbean, South Florida, and Brazil—the world’s largest producer and consumer of passion fruit. The fruit is typically round, turning yellow or dark purple when ripe, and is filled with numerous seeds.

Passion fruit is widely used for juices or pulps, often blended with other fruits like orange. It is famously known as the “fruit of tranquility,” and its tea is frequently recommended as a natural relaxant. The passion flower is primarily pollinated by large carpenter bees (Source: Wikipedia).
