Classic Swiss Rösti Recipe: Crispy & Sophisticated at Home

Ingredients for the Perfect Swiss Rösti:

  • 1.1 lbs (approx. 500g) of potatoes (I recommend Yukon Gold for this recipe);
  • 2 tbsp (30g) of clarified butter (ghee);
  • 2 tbsp (30g) of unsalted butter;
  • 1 tsp (15g) of salt.

How to Make Swiss Rösti:

  1. In a medium pot, add enough water to completely cover the potatoes;
  2. Add salt and place the whole, unpeeled potatoes in the water to boil;
  3. Once the water starts boiling, reduce the heat and simmer for 10 minutes, then turn off the heat;
  4. The ideal texture for the potato is “al dente”—it should still be firm enough to resist a fork. Do not overcook them, or they will be difficult to grate;
  5. Transfer the potatoes to a bowl of cold water to stop the cooking process immediately;
  6. Refrigerate for at least 2 hours (if possible, do this the night before; chilling is key to perfect texture);
  7. Once chilled, peel the potatoes and grate them using the medium holes of a grater;
  8. Mix in 1/2 teaspoon of salt into the grated potatoes;
  9. Grease a medium skillet with the clarified butter;
  10. Heat the skillet over medium heat until the butter is hot and shimmering;
  11. Spread the grated potatoes across the skillet to cover the bottom, then use a spatula to shape them into a nice round disk;
  12. Press down firmly in the center and around the edges to ensure the potatoes hold together;
  13. Add an extra tablespoon of butter around the edges of the pan;
  14. After 3 minutes of frying, add the pieces of unsalted butter around the perimeter. This helps the Rösti brown evenly, prevents burning, and adds a rich, golden flavor;
  15. Give the pan a gentle shake and reshape the edges with your spatula if needed;
  16. After 6 minutes, carefully flip the potato pancake and repeat the process for the other side, frying for another 6 minutes;
  17. Carefully slide your golden, crispy Rösti out of the pan and serve immediately;
  18. Enjoy!
