Ingredients for the Ultimate Brigadeirão:
For the Brigadeirão:
- 3 large eggs;
- 1 can (14 oz) sweetened condensed milk;
- 1 cup high-quality unsweetened cocoa powder;
- 1 can (approx. 10-12 oz) table cream (or heavy cream);
- 2 tablespoons unsalted butter;
- 3 tablespoons granulated sugar.
For the Topping:
- 2 tablespoons unsweetened cocoa powder;
- 1 tablespoon whole milk;
- ½ can (approx. 7 oz) sweetened condensed milk;
- Chocolate sprinkles (granulado) for garnish.
How to Make Brigadeirão:
- Preheat your oven to 350°F (180°C). Grease a round cake pan or a bundt/flan mold with butter.
- In a blender, combine all the “Brigadeirão” ingredients and blend until completely smooth.
- Pour the mixture into your prepared mold.
- Place the mold inside a larger roasting pan filled with warm water (water bath/bain-marie). Bake for 1 hour.
- While it bakes, prepare the topping: In a small saucepan, combine the sweetened condensed milk, milk, and cocoa powder (save the sprinkles for later).
- Cook over low heat, stirring constantly, until the sauce thickens to your desired consistency. Set aside.
- Once the cake is done, remove it from the oven and let it cool until lukewarm.
- Carefully unmold onto a serving plate.
- Pour the chocolate topping over the top and decorate generously with chocolate sprinkles.
