Ingredients for this healthy cauliflower polpettone:

  • 1 egg;
  • 8 tbsp grated Parmesan cheese;
  • 3 tbsp capers;
  • 2 small heads of cauliflower (or 1 large);
  • 2 cloves garlic, minced;
  • 3 tbsp extra-virgin olive oil;
  • Fresh parsley, chopped to taste;
  • Breadcrumbs for coating;
  • Olive oil or butter for pan-searing;
  • Salt to taste;
  • Fresh parsley and scallions (cheiro-verde), chopped to taste;
  • Black pepper to taste.

How to make this healthy cauliflower polpettone:

  1. Separate the cauliflower into florets, wash thoroughly, and boil in salted water for about 15 minutes, or until tender;
  2. Drain well, then transfer to a skillet with the garlic and olive oil. Sauté, mashing with a fork until you achieve a smooth puree consistency;
  3. Season with salt and black pepper, then remove from heat;
  4. Place the puree in a mixing bowl and let it cool until lukewarm. Add the egg, Parmesan cheese, capers, parsley, and 4 tablespoons of breadcrumbs;
  5. Mix everything well until you get a firm dough;
  6. Cover and let it rest for 30 minutes;
  7. After resting, take small portions of the dough and shape them into small patties or balls;
  8. Coat them in a mixture of breadcrumbs, chopped parsley, and scallions;
  9. Pan-sear in a skillet with olive oil or butter;
  10. Brown on both sides and you’re done. Enjoy!

You can also bake these in an air fryer for a healthier version. Another great suggestion is to use a cauliflower and broccoli mix for the base of the dough.
