  • 4 lbs (approx. 1.8 kg) Pork shoulder (pork butt/picnic roast);
  • Salt to taste;
  • Black pepper to taste;
  • 1 cup Fresh orange juice;
  • 6 tbsp Fresh rosemary;
  • 6 tbsp Fresh sage leaves, torn;
  • 1 tsp Nutmeg, freshly grated;
  • 6 cloves Garlic, smashed.

How to Prepare Roasted Pork Shoulder:

  1. In a blender, combine the orange juice, herbs, nutmeg, and garlic;
  2. Blend until you achieve a smooth consistency;
  3. Place the pork shoulder in a dish and pour the marinade over it. Cover and refrigerate for 2 hours to infuse flavors;
  4. Turn the meat halfway through the marinating time;
  5. After marinating, remove the meat and place it into a roasting pan;
  6. Season with salt and black pepper to taste;
  7. Allow the meat to come to room temperature, then place it in a preheated oven at 400°F (200°C) for 20 minutes to sear and brown;
  8. Lower the oven temperature to 350°F (180°C), baste with the reserved marinade, and cover tightly with aluminum foil;
  9. Roast for an additional 40 minutes, turning the meat halfway through;
  10. Once cooked, remove the foil and let it rest for 5 minutes with the oven turned off;
  11. Slice the pork and serve drizzled with the pan juices;
