Ingredients for homemade chicken bouillon:
- 1 skinless, boneless chicken breast fillet;
- Extra-virgin olive oil for greasing and sautéing;
- 1 carrot;
- 1 onion;
- 1 leek;
- Fresh parsley to taste;
- 2 tsp minced garlic;
- Approx. 3 tbsp (50ml) of water to cook the vegetables and help blend the chicken;
- Black pepper to taste.
How to make homemade chicken bouillon:
- Thinly slice the chicken breasts and place them on a baking sheet greased with olive oil;
- Bake at 350°F (180°C) for 20 minutes, then flip the fillets and bake for another 20 minutes;
- Once cooled, pulse the chicken in a food processor until finely ground;
- Set the chicken aside;
- Chop the carrot, leek, onion, and parsley;
- In a pan with olive oil, sauté the onion, minced garlic, and leek;
- Add the chopped carrot, parsley, salt, and black pepper;
- Stir well, add a little water, and simmer until the carrots are tender;
- Transfer the vegetable mixture to a food processor, add the ground chicken and a splash of water to help blend;
- Process until you reach a smooth, paste-like consistency;
- Pour the mixture into an ice cube tray to shape your bouillon cubes;
- Freeze for about 4 hours, or pour into a container to cut into cubes once frozen;
- Wrap each cube in small squares of aluminum foil (shiny side in);
- Return to the freezer for storage. Simply grab a cube whenever your recipe calls for chicken stock!
