  • 2 heads of cabbage;
  • 2 carrots;
  • A generous handful of sea salt.

How to Make Homemade Sauerkraut:

  1. Slice the cabbage into thin shreds, place in a large mixing bowl, and add the salt;
  2. Mix well with your hands, massaging the cabbage firmly until it softens and releases plenty of liquid;
  3. Cover with plastic wrap and let it rest overnight at room temperature;
  4. The next day, peel and grate the carrots;
  5. Add the grated carrots to the bowl with the cabbage and mix thoroughly;
  6. Squeeze out any excess liquid and pack the cabbage and carrot mixture tightly into clean, dry jars;
  7. Seal the sterilized jars tightly;
  8. Place the jars on a kitchen towel in a cool, airy spot away from direct sunlight for about 2 to 3 weeks to ferment. After this period, move them to the refrigerator to slow down the fermentation process, and it’s ready to serve!
