  • 1.1 lbs (500g) beef (chuck roast or brisket work best)
  • 4 garlic cloves, minced
  • Juice of 1 lime

  • 1 tsp annatto powder (or mild paprika)
  • Salt to taste
  • 2 bay leaves
  • 2.2 lbs (1 kg) cassava root (yuca), peeled and chopped
  • 8 cups (approx. 2 liters) water
  • Extra-virgin olive oil for sautéing

How to Prepare Brazilian Cassava and Beef Stew:

  1. Season the beef with minced garlic, lime juice, minced chili, annatto, and salt. Let it marinate for at least 30 minutes.
  2. In a pressure cooker, heat a drizzle of oil and brown the seasoned beef.
  3. Add enough water to cover the meat. Seal the cooker and cook for about 30 minutes once it reaches pressure. The meat should be tender enough to shred easily.
  4. While the beef cooks, peel the cassava and cut it into chunks.
  5. In a separate pot, boil the cassava in 8 cups of water until it is very tender and starting to fall apart.
  6. Remove the beef from the pressure cooker, shred or chop into small pieces, and set aside.
  7. Once the cassava is cooked, blend half of it with a little of its cooking liquid until smooth and creamy.
  8. In a large pot, heat a little oil and sauté the remaining chunks of boiled cassava with extra minced garlic.
  9. Add the shredded beef and the blended cassava cream. Stir well to combine.
  10. Add the reserved beef cooking broth and extra water until you reach your desired consistency.
  11. Toss in the bay leaves, simmer for a few more minutes, and adjust salt if needed.
  12. Serve hot and enjoy every spoonful of this comforting stew.
