Christmas is approaching, and with it come the delightful treats that make this season so special. Among the typical holiday sweets, the homemade chocotone is a true classic that keeps winning over more fans. But what if you could prepare a chocotone at home that tastes just as good as the ones from top-tier bakeries, with the added benefit of being easy, quick, and made with love?

In this recipe, we’ll explore a practical and irresistible version, packed with chocolate and without complicated steps. Unlike the traditional panettone, which requires long fermentation processes, this recipe delivers a fluffy, delicious result with much less effort. Perfect for gifting or serving at your Christmas dinner, this homemade chocotone will delight everyone.

Ingredients for homemade chocotone:

For the initial sponge (starter):

  • 1 cup warm water (not hot)
  • 6 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon active dry yeast

For the dough:

  • 3 cups all-purpose flour
  • 8 tablespoons granulated sugar
  • 3 egg yolks
  • 3 tablespoons vanilla extract
  • 3 tablespoons panettone essence (or orange extract)
  • 1 tablespoon powdered milk
  • 1 tablespoon cocoa powder (optional)
  • 1 pinch of salt
  • 4 tablespoons unsalted butter or margarine
  • 7 oz (200g) semi-sweet chocolate chips
  • 3.5 oz (100g) chopped chocolate (optional, for filling)

How to make homemade chocotone:

  1. Prepare the starter: In a bowl, mix the warm water, flour, sugar, and active dry yeast. Stir well, cover, and let it rest for 10 minutes.
  2. Mix the liquids: In a stand mixer, add half a cup of room-temperature water, sugar, essences, powdered milk, cocoa (if using), and salt. Beat until incorporated.
  3. Add flour and starter: Add the egg yolks, the rested starter, and half the flour. Beat until homogeneous. Continue adding the flour gradually, mixing constantly.
  4. Incorporate the butter: Add the butter gradually, one tablespoon at a time, beating well after each addition. Continue beating until the dough is elastic and smooth.
  5. Add the chocolate: Fold in the chilled chocolate chips. Place the dough in an oil-greased bowl, cover, and let it rest for 1 hour or until doubled in size.
  6. Shape: Divide the dough into the desired size, add the chopped chocolate (optional), and place in buttered panettone paper molds.
  7. Let it rise: Let the dough rise again for another hour.
  8. Bake: Make a shallow cut on top, add a few extra chocolate chips and a small pat of butter. Bake in a preheated oven at 350°F (180°C) for 40 to 45 minutes.

Tips for Success:

  • Watch the water temperature: The water temperature is crucial. If it’s too hot, it will kill the yeast.
  • Use chilled chocolate: This prevents the chips from melting during the kneading process, ensuring they remain whole in the dough.
  • Don’t overstuff: Too much chocolate can weigh down the dough, making it difficult for the panettone to rise.
  • Resting time: Let the dough rise until it truly doubles. This guarantees a fluffy and airy texture.
  • Get creative: Add nuts, candied fruits, or fillings like hazelnut spread for a twist.
  • Storage: Wrap them in decorated cellophane bags for gifts. They last up to 5 days at room temperature when kept sealed.

Prep time:

About 3 hours (including resting time).

Yield:

2 large or 5 small chocotones.

A little history:

Chocotone is a variation of panettone, a sweet bread of Italian origin. Created in Milan in the 15th century, the traditional panettone was originally filled with candied fruits and raisins. In Brazil, the chocolate version won over the hearts of everyone and became a beloved holiday symbol.

Homemade production has gained massive popularity, especially among those who prefer artisanal recipes over mass-produced goods. Plus, making your own allows for endless flavor combinations, making every loaf unique.

Whether for your Christmas dinner or as a thoughtful gift, a homemade chocotone is the perfect way to add a special touch to your holiday season. Try this recipe and surprise your family and friends!
