A bit about the nutrition of potatoes:

Potatoes are incredibly versatile, carbohydrate-rich, and globally popular. Fresh potatoes consist of about 80% water and 20% dry matter, primarily starch. They contain protein levels comparable to grains when dehydrated and are high in micronutrients, especially vitamin C. Potatoes are also a good source of vitamins B1, B3, and B6, as well as minerals like potassium, phosphorus, and magnesium. They contain dietary fiber and antioxidants that help support overall health.
