  • Water, as needed;
  • Salt, to taste;
  • Black pepper, to taste;
  • Extra-virgin olive oil;
  • 1 tbsp butter;
  • 1/2 cup cream cheese (or light cream cheese).

How to make the Peruvian Parsnip Soup:

  1. Peel the parsnips and cut them into small pieces;
  2. Boil them in water with a pinch of salt and a drizzle of olive oil until they are very tender;
  3. Once cooked, let them cool slightly;
