Ingredients for the Shrimp and Broccoli Quiche:
Note: We recommend using a springform pan so you can easily remove the quiche once it’s baked.
Crust:
- 2 egg yolks;
- 10 tbsp (approx. 150g) unsalted butter, softened;
- 2 cups (approx. 250g) all-purpose flour.
Filling:
- 7 oz (200g) cream cheese (or original Brazilian Catupiry if available);
- 1/2 cup heavy cream (or 1 can table cream);
- 2 eggs;
- Salt to taste;
- Black pepper to taste;
- 1/2 cup shredded mozzarella cheese;
- 14 oz (400g) medium shrimp, peeled and deveined;
- 1/2 yellow onion, finely diced;
- 1 tbsp butter;
- 2 tbsp fresh parsley and scallions, chopped;
- 1 cup broccoli florets, steamed.
How to Make Shrimp and Broccoli Quiche:
- In a large mixing bowl, combine the all-purpose flour, butter, a pinch of salt, and egg yolks;
- Mix thoroughly by hand until you have a smooth, well-combined dough;
- Wrap the dough in plastic wrap and let it rest in the refrigerator;
- While the dough rests, preheat your oven to 350°F (180°C);
- In a large skillet over medium heat, melt the tablespoon of butter;
- Sauté the onion until translucent;
- Add the cleaned shrimp, seasoning with salt and pepper to taste;
- Once the shrimp are pink, stir in the broccoli florets and fresh herbs; remove from heat;
- In a separate bowl, whisk together the cream cheese, heavy cream, eggs, and shredded mozzarella;
- Mix well and adjust salt if necessary;
- Take your springform pan and press the dough evenly into the bottom and up the sides;
- Evenly distribute the shrimp and broccoli mixture into the crust;
- Pour the creamy cheese mixture over the shrimp and broccoli;
- Bake at 350°F (180°C) for 30 minutes. Increase the oven temperature to 425°F (220°C) and bake for an additional 15 minutes, or until the top is golden brown;
- Keep an eye on it to ensure the crust doesn’t burn;
- Remove from the oven, let it cool slightly, then remove the sides of the pan;
