Today we are sharing a recipe for a cozy, comforting treat. It’s hard for anyone to turn this one down! This traditional Brazilian cornmeal cake (bolo de fubá) delights almost every palate with its simplicity and irresistible flavor. With this recipe, you’ll feel like you’re eating a slice of cake straight from a rustic farmhouse. Brew some fresh coffee and let’s get baking!

Ingredients for the traditional cornmeal cake:

  • 1 ½ cups granulated sugar;
  • 1 ½ cups all-purpose flour;
  • 2 cups (approx. 500ml) whole milk;
  • 1 ½ cups fine cornmeal (fubá);
  • 3 large eggs;
  • ¾ cup vegetable oil;
  • 1 tablespoon baking powder.

How to make the traditional cornmeal cake:

  1. In a blender, add the eggs, oil, sugar, cornmeal, all-purpose flour, and milk;
  2. Blend everything very well for about two minutes, until you have a smooth, homogeneous mixture;
  3. Add the baking powder and mix gently with a spatula just until incorporated;
  4. Grease a cake pan with oil and dust it with a little cornmeal;
  5. Pour the batter into the prepared pan, spreading it evenly;
  6. Bake in a preheated oven at 350°F (180°C) for about 40 minutes, or until golden brown and a toothpick inserted into the center comes out clean;
  7. If you wish to unmold the cake, wait for it to cool down slightly;
  8. Enjoy!

Pro Tip:

To make the cake even softer, try replacing a portion of the white sugar with light brown sugar. Brown sugar has more moisture than refined white sugar, which helps keep the cake moist and tender for longer.
