Traditional ratatouille has become a global favorite, and for good reason—it’s a wonderful, flavorful, and nutrient-packed dish. Today, we’re sharing how to prepare this classic French vegetable stew at home. Let’s get cooking!
Ingredients for your Ratatouille:
- 2 Tomatoes;
- 2 Potatoes;
- Black pepper to taste;
- Salt to taste;
- 1 medium Onion;
- 2 Bell peppers;
- 1 Bay leaf;
- 1 Zucchini;
- 1 Eggplant;
- 1 Garlic clove;
- Extra-virgin olive oil to taste.
How to make Ratatouille:
- Start by slicing the eggplant into thin rounds;
- Place the slices in a bowl with water and 1/4 cup of white vinegar. Let them soak for 15 minutes to remove any bitterness;
- Slice the potatoes, pre-boil them until tender-crisp, and set aside;
- Slice the zucchini into thin rounds and dice the tomatoes;
- Remove the seeds from the bell peppers and slice them into strips;
- Heat olive oil in a large pan and add the sliced onions;
- Once the onions turn slightly golden, add the minced garlic and sauté until fragrant;
- Rinse and drain the eggplant slices;
- Add all the vegetables, the bay leaf, bell peppers, and seasonings to the pan. Mix gently, being careful not to break the vegetables;
- Cover partially and simmer over low heat. Monitor until all the vegetables are tender and flavorful;
- Transfer to a serving dish and enjoy;
- Bon appétit!
Pro Tip:
If you prefer your vegetables to be more “al dente,” you can sauté them separately before combining them for the final assembly.
