Ingredients for this oat pudding:

  • 1 cup rolled oats
  • 4 cups water
  • 1/2 cup cornstarch
  • 1 tablespoon vanilla extract
  • 1 strip of orange or lemon peel
  • 1 cinnamon stick
  • For topping: Honey or pure maple syrup

How to make oat pudding:

  1. In a saucepan, combine the rolled oats and water.
  2. Bring to medium heat and cook until the oats are soft and have absorbed most of the water.
  3. Next, add the cornstarch and stir well to dissolve it into the mixture.
  4. Add the vanilla extract, the orange or lemon peel, and the cinnamon stick.
  5. Stir everything thoroughly.
  6. Cook over low heat, stirring constantly, until the mixture thickens and reaches a pudding-like consistency.
  7. Remove the orange or lemon peel and the cinnamon stick.
  8. Pour the oat pudding into individual serving bowls or a lightly greased pudding mold.
  9. Let it cool to room temperature, then refrigerate for at least 2 hours to set.
  10. When ready to serve, unmold (if using a mold) and drizzle with honey or maple syrup.
  11. If using individual bowls, simply drizzle the topping over each serving.
  12. Enjoy!

You can add a tablespoon of butter or coconut oil to the mixture before refrigerating. This helps create a richer texture and enhances the oat flavor.
