  • 5 Ripe bananas;
  • Juice of half a lemon;
  • 1 ¼ cups (300 ml) milk;
  • ½ cup (50g) cornstarch;
  • 3 Egg yolks;
  • 1 teaspoon vanilla extract;
  • 2 cups (500 ml) heavy whipping cream.

How to make sugar-free banana cream:

  1. Peel and slice the bananas;
  2. Place the sliced bananas in a saucepan and add the lemon juice;
  3. Mash them thoroughly until they form a smooth purée;
  4. Turn the heat to medium and cook for two minutes once it begins to simmer;
  5. Turn off the heat, add half of the milk, and mix well;
  6. Add the cornstarch and the three egg yolks;
  7. Whisk everything well until fully incorporated;
  8. Once smooth, stir in the remaining half of the milk;
  9. Return the pan to medium heat and stir in the vanilla extract;
  10. Cook until thickened, then remove from heat. Transfer to a glass container and cover with plastic wrap (touching the surface of the cream);
  11. Let it cool completely at room temperature;
  12. Once cooled, refrigerate for about 2 hours, or until firm;
  13. After refrigerating, transfer to a mixer and beat until creamy. Set aside;
  14. In a separate bowl, whip the heavy cream for about 3 minutes until stiff peaks form;
  15. Gently fold the banana base into the whipped cream and beat briefly until combined;
  16. It’s ready to use as a delicious filling or frosting for your desserts!
