  • 3 tbsp extra-virgin olive oil;
  • 2 tsp unsalted butter;
  • 1 chicken bouillon cube;
  • 6 cups (approx. 1.5 liters) water;
  • 1/2 cup fresh chives, chopped;
  • Salt to taste;
  • Freshly ground white pepper to taste.

How to make Potato Soup:

  1. Start by peeling and cutting your vegetables into large chunks.
  2. In a large pot, heat the olive oil and butter over medium heat.
  3. Add the vegetables to the pot and sauté for about 5 minutes, stirring frequently.
  4. Season with a pinch of salt, then add the chicken bouillon cube and the water.
  5. Bring to a boil and let the soup simmer for about 30 minutes, or until the vegetables are tender.
