Ingredients for the Perfect Tiramisu:

  • 1 package ladyfingers (savoiardi)
  • ¾ cup cold coffee (brewed)
  • 1 tablespoon coffee liqueur (optional)
  • 3.5 oz egg whites (about 3 large egg whites)
  • ½ cup granulated sugar, divided
  • 3 egg yolks
  • ½ cup heavy whipping cream (at least 35% fat)
  • 7 oz Mascarpone cheese
  • 1 tablespoon cocoa powder, for dusting

How to Make Authentic Tiramisu:

  1. Create a double boiler (bain-marie) with simmering water. In a heat-safe bowl, combine egg whites and half of the sugar (¼ cup). Whisk constantly until the whites are fluid and the sugar has completely dissolved.
  2. Remove from heat and beat the egg whites until stiff peaks form.
  3. In a separate bowl, beat the egg yolks with the remaining sugar until the mixture is pale and fluffy.
  4. In another bowl, whip the heavy cream until you achieve firm whipped cream peaks.
  5. Gently fold the Mascarpone cheese into the egg yolk mixture until smooth. Then, carefully fold in the beaten egg whites and whipped cream until combined.
  6. Line a baking dish with parchment paper. Quickly dip the ladyfingers into the coffee and liqueur mixture and arrange them in a single layer at the bottom of the dish.
  7. Spread a layer of the cream mixture over the ladyfingers.
  8. Repeat the layers, ending with a generous layer of cream on top.
  9. Refrigerate the Tiramisu for at least six hours, or preferably overnight.
  10. Dust generously with cocoa powder just before serving.

Chef’s Tip:

Tiramisu tastes even better when prepared a day in advance! Letting it rest overnight allows the flavors to meld and ensures that perfect, creamy, melt-in-your-mouth texture.
