  • 3.5 oz (100 g) roasted unsalted peanuts, skinned
  • 3.5 oz (100 g) raw cashew nuts
  • 1/2 cup red palm oil (Azeite de Dendê)
  • Salt to taste

How to Make Bahian Caruru:

  1. Chop the okra into small, thin slices. Clean the dried shrimp by removing any heads or tails.
  2. In a blender, pulse the dried shrimp with a little water and some of the coconut milk. Strain the mixture to keep the flavorful liquid.
  3. Return the strained liquid to the blender. Add the remaining coconut milk, cilantro, onions, peanuts, and cashews. Blend until you achieve a smooth, creamy mixture.
  4. Heat the red palm oil (azeite de dendê) in a large pot and briefly sauté a few extra dried shrimp if desired.
  5. Add the chopped okra to the pot and cook over medium heat until tender, stirring occasionally.
  6. Pour the blender mixture into the pot. Reduce heat to low and simmer for about 40 minutes, stirring occasionally, until the consistency is thick and velvety.
  7. Taste and adjust salt as needed.
  8. Once the caruru is fully cooked and thick, turn off the heat and enjoy this Bahian classic!
