  • 12 oz (340g) tomato sauce
  • Dried oregano for topping

Instructions:

  1. Start by boiling the potatoes until very soft. Drain and mash them into a smooth purée.
  2. In a large bowl, combine the ground beef, onion, garlic, olive oil, paprika, crushed red pepper, annatto, oregano, salt, parsley, scallions, eggs, and breadcrumbs. Mix until well combined.
  3. In a greased baking dish, spread half of the meat mixture across the bottom.
  4. Spread the cream cheese over the meat, followed by the tomato slices.
  5. Sprinkle with half of the shredded mozzarella.
  6. Top with the remaining meat mixture and smooth the surface.

  8. Remove the foil, pour the tomato sauce over the top, and sprinkle with the remaining mozzarella and a pinch of dried oregano.
  9. Bake uncovered for another 20 minutes or until the meat is fully cooked and the cheese is melted and golden.
