Ingredients:

- 2 cups (500ml) milk
- 1 cup (250ml) chicken broth with 1 bouillon cube dissolved
- 1 teaspoon salt
- 3 tablespoons vegetable oil
- 1 tablespoon margarine or butter
- 3 ½ cups (500g) all-purpose flour
Filling:
- 1.5 lbs (700g) cooked shredded chicken
- 1/2 small onion, grated
- 2 cloves garlic, minced
- 2 tablespoons tomato sauce
- Salt and pepper to taste
- Fresh parsley and scallions, chopped
- Cream cheese (or Brazilian Requeijão if available)
Breading:
- 2 large eggs
- A pinch of salt
- 1/2 cup (110ml) water
- 2 tablespoons white vinegar
- Breadcrumbs
How to Make Brazilian Chicken Coxinhas:
- In a large pot, combine milk, chicken broth, bouillon, salt, oil, and margarine. Bring to a boil.
- Add the flour all at once and stir constantly until the dough pulls away from the sides of the pot. This takes about 15 minutes.
- Turn the dough onto a floured surface and let it cool for a few minutes.
- While the dough cools, prepare the filling: sauté the onion and garlic in a bit of oil until golden.
- Add tomato sauce, salt, pepper, and shredded chicken. Mix well, stir in the herbs, and set aside.
- Once the dough is warm to the touch, shape small portions into teardrop shapes (coxinhas). Create a hollow center, fill with the chicken mixture and a spoonful of cream cheese, and seal tightly.
