You don’t need expensive cod to prepare a beautiful meal for your family this Good Friday; in fact, this dish is perfect for Easter lunch as well. We want to share a fantastic recipe featuring a more budget-friendly fish. Our suggestion? A delicious Baked Hake Fillet. Let’s get cooking!
Ingredients for the Baked Hake Fillet:
- 1.75 lbs (approx. 800g) Hake fillets (or any mild white fish like cod or tilapia);
- Juice of 1 lemon;
- 2 cloves garlic, minced;
- Salt to taste;
- 1/2 bell pepper of your choice, diced;
- 3 tomatoes, chopped;
- Fresh parsley, to taste;
- Fresh scallions (green onions), chopped to taste;
- Chimichurri seasoning, to taste;
- 1 tablespoon extra-virgin olive oil;
- 1 1/2 onions, chopped;
- 4 potatoes;
- Black pepper to taste.
How to make Baked Hake Fillet:
- In a shallow dish, place the fish fillets;
- Pour the lemon juice over the fish;
- Add the minced garlic and diced bell pepper;
- Distribute the chopped tomatoes and the remaining seasonings (salt, chimichurri, scallions, parsley, onion, black pepper, and olive oil);
- Let it marinate in the refrigerator for about 20 minutes;
- Meanwhile, slice the potatoes into rounds and boil them in salted water until they are “al dente” (firm to the bite);
- Remove the fish from the refrigerator and grab a large baking dish;
- Add a layer of potatoes to the bottom of the dish and arrange the fish fillets on top;
- Pour all the remaining marinade liquid over the fish and potatoes;
- Bake in a preheated oven at 350°F (180°C) for 25 minutes, and it’s ready to serve!
