  • 1 ⅓ cups (270g) granulated sugar;
  • Lemon zest (optional);
  • ½ teaspoon (2g) butter (for greasing).

How to make Maria Mole:

  1. Lightly grease a baking dish with butter;
  2. Sprinkle a portion of the desiccated coconut over the prepared dish;
  3. Boil the water;
  4. Pour the boiling water into a stand mixer bowl;
  5. Add the gelatin and mix until completely dissolved;
  6. Beat the mixture for about 2 minutes to ensure it is fully incorporated;
  7. Add the sugar and mix again;
  8. Add the egg whites and beat on high speed for 10 minutes until fluffy;
  9. If desired, fold in the lemon zest;

  11. Sprinkle more coconut over the top;
  12. Refrigerate until completely firm;
