Ingredients for Yellow Rice:
- 1 ¾ cups long-grain white rice;
- 3 cups chicken broth;
- ¼ teaspoon ground cinnamon (optional);
- 1 bay leaf;
- ½ yellow onion, finely chopped;
- 2 tablespoons vegetable oil;
- 1 teaspoon ground turmeric (or saffron).
How to make Yellow Rice:
- Start by heating the oil in a medium saucepan over medium heat;
- Add the chopped onion and sauté until translucent and slightly golden;
- Stir in the rice and sauté for about 2 minutes to toast slightly;
- Add the turmeric (or saffron) and lower the heat;
- Cook, stirring constantly, for 1 to 2 minutes;
- Pour in the chicken broth, then add the cinnamon and the bay leaf; stir well to combine;
- Bring to a boil, then reduce the heat to low;
- Cover the pot tightly with a lid;
- Simmer on low for 15 minutes, or until the liquid is fully absorbed and the rice is tender;
- Remove the bay leaf before serving. Enjoy!
