  • 5 oz (150g) shredded Monterrey Jack or mild white cheddar (substitute for Minas Padrão)
  • 3.5 oz (100g) grated Parmesan cheese
  • 3.5 oz (100g) shredded provolone cheese
  • 7 oz (200g) cream cheese or mascarpone (substitute for Catupiry)
  • 2 onions, finely diced
  • 2 cloves garlic, minced
  • 18 oz (approx. 500g) jarred marinara or tomato sauce
  • Extra-virgin olive oil
  • Salt to taste
  • Cayenne pepper to taste
  • Dried parsley to taste

How to Prepare Four-Cheese Stuffed Conchiglione:

The Pasta:

  1. Bring a large pot of salted water to a boil. Season generously with salt, until it tastes like the ocean.
  2. Add the conchiglione and cook until al dente, following package instructions. Drain and set aside.

The Sauce:

  1. In a separate pan, heat a splash of olive oil and sauté the onions and garlic until translucent.
  2. Add the marinara sauce and let it simmer for a few minutes. Season with salt, cayenne pepper, and dried parsley to taste. Set aside.

The Filling:

  1. In a mixing bowl, combine the shredded mozzarella, Monterrey Jack, Parmesan, and provolone.
  2. Add the cream cheese to the cheese blend and mix well until you have a smooth, homogeneous filling.

Assembly:

  1. Preheat your oven to 350°F (180°C).
  2. Take each pasta shell and fill it generously with the cheese mixture.
  3. Spread a thin layer of tomato sauce on the bottom of a baking dish.
  4. Arrange the stuffed shells on top of the sauce.
  5. Cover the shells with the remaining tomato sauce.
  6. Sprinkle a little extra Parmesan on top for a golden finish.
  7. Cover the dish with aluminum foil and bake for about 20 minutes, or until the cheese is completely melted and bubbly.

To Serve:

  1. Remove from the oven, carefully take off the foil, and serve the Four-Cheese Conchiglione while piping hot.
  2. Garnish with fresh chopped parsley for a touch of freshness.

Pro Tip:

To ensure the shells don’t stick together after boiling, add a drizzle of olive oil to the cooking water. This makes them much easier to handle when stuffing.
