Ingredients for Healthy Lentil Bread:

  • 2 cups dried lentils;
  • 7 oz (approx. 200g) mild farmer’s cheese or queso fresco, crumbled;
  • 10 sprigs fresh dill, chopped;
  • 6 green onions (scallions), finely sliced;
  • 1 cup Greek yogurt;
  • 1/2 cup pitted olives, chopped;
  • 4 large eggs;
  • 1 pinch crushed red pepper flakes;
  • 3.5 tbsp extra-virgin olive oil;
  • 1/4 tsp freshly ground black pepper;
  • 1 tsp baking soda;
  • 1 tsp baking powder;
  • 3.5 oz (100g) shredded cheddar cheese;
  • 2 tbsp sesame seeds.

How to make Healthy Lentil Bread:

  1. First, rinse the lentils well and soak them in water for one hour;
  2. Drain the lentils thoroughly and pulse them in a food processor or blender until you have a smooth purée;
  3. Transfer the lentil purée to a large mixing bowl. Add the eggs, baking soda, baking powder, Greek yogurt, olive oil, black pepper, and a pinch of salt to taste;
  4. Mix everything well until thoroughly incorporated;
  5. Fold in the cheeses, herbs, olives, and red pepper flakes;
  6. Prepare two small loaf pans or one large one by greasing them with a little butter or olive oil;
  7. Pour the batter into the prepared pans and sprinkle the sesame seeds on top;
  8. Bake in a preheated oven at 350°F (180°C) for 35–40 minutes, or until golden brown and a toothpick inserted comes out clean;
  9. Remove from the oven, let it cool slightly, and serve!
