This homemade cinnamon bread looks just like the beautiful bakery-style rolls you crave. Once you try this recipe, you’ll definitely want to bake a dozen! Let’s get started.

Ingredients for Cinnamon Bread:

  • 1 Egg
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • 1/3 cup granulated sugar
  • 2 ½ cups all-purpose flour (approx. 300g)
  • 1 pinch of salt to enhance flavor
  • Cinnamon and sugar to taste (for the filling)
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon active dry yeast
  • 1 egg yolk mixed with 1 teaspoon of water (for egg wash)

How to Make Cinnamon Bread:

  1. In a bowl, mix 2 cups (250g) of the flour with the yeast and set aside.
  2. In a blender, combine the milk, oil, egg, sugar, and salt.
  3. Add the liquid mixture to the bowl with the flour and yeast and mix well.
  4. Gradually add the remaining flour until the dough is homogeneous and begins to pull away from your hands.
  5. Add more flour as needed if the dough is too sticky.
  6. Transfer the dough to a smooth, floured surface and knead well for about 15 minutes.
  7. Continue adding small amounts of flour if the dough is still sticking.
  8. After kneading, the dough should be smooth and aerated.
  9. Test it: poke the dough with your finger; if it springs back, it is ready.
  10. Cover the dough with a cloth or plastic wrap and let it rise for about one hour, or until doubled in size.
  11. Transfer the dough to a floured board and roll it out into a rectangle.
  12. If you prefer, divide the dough into two to make smaller rectangles.
  13. Spread the melted butter over the surface and sprinkle with the cinnamon and sugar mixture.
  14. Roll it up like a jelly roll.
  15. Cut the roll into 10 slices, each about two fingers wide.
  16. Place the rolls in a greased and floured baking pan.
  17. Let them rest in a warm, draft-free place for 40 minutes to 1 hour, or until doubled in size again.
  18. Brush each roll with the egg yolk and water wash.
  19. Bake in a preheated oven at 425°F (220°C) for 30 minutes.
  20. Your cinnamon bread is ready to serve!
