Ingredients for the buttery guava cookies:
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper;
- In a bowl, add the unsalted butter (at room temperature) and the sugar;
- Mix well until you get a creamy consistency;
- Add the egg yolk and mix again;
- Gradually add the all-purpose flour and mix until a smooth and soft dough forms;
- With your hands, take small portions of the dough and roll them into balls;
- Make an indentation in the center of the ball with your finger and place a small piece of guava paste (goiabada) inside;
- Shape it back into a ball to seal the filling;
- Roll the balls in granulated sugar to coat them and place them on the baking sheet, leaving space between them;
- Bake in the preheated oven for about 15 minutes, or until they are lightly golden;
- Remove the cookies from the oven and let them cool before serving;

Tip:
To ensure the cookies stay soft on the inside and crispy on the outside, do not overbake them. Keep an eye on the oven so they don’t burn, as baking time can vary depending on your oven.
