Ingredients for the Mini Chocolate Tarts:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • ⅓ cup (about 5.5 tablespoons) cold unsalted butter, cubed
  • 7 oz bittersweet chocolate (or milk chocolate, if preferred), chopped
  • ¾ cup heavy cream

Instructions:

  1. In a mixing bowl, combine the flour, sugar, and butter until a smooth, uniform dough forms.
  2. Press the dough firmly into mini tart tins. Place them in the freezer until firm.
  3. Once frozen, prick the bottoms with a fork. Bake in a preheated oven at 400°F (200°C) for 15 to 20 minutes, or until golden brown.
  4. While the tart shells bake, prepare the ganache: melt the 7 oz of chocolate and mix it with the ¾ cup of heavy cream until smooth and glossy.
  5. Carefully remove the tart shells from the tins and fill them with the ganache.
