Perfect Brazilian Tapioca Pudding Recipe

Ingredients

  • 1/2 cup granulated sugar
  • 1 cup shredded coconut (unsweetened)
  • 1 cup coconut milk
  • 1 cup whole milk
  • Butter (for greasing)
  • 1 cup sweetened condensed milk (for drizzling)
  • 1 pinch of salt
  • Fresh shredded coconut (for garnish)
  • 2 cups granulated tapioca (tapioca pearls)
  • 1 cup (approx. 240ml) warm water

Instructions

Start by combining the granulated tapioca and water in a bowl. Stir well and let it hydrate for a few minutes until the tapioca absorbs the liquid.

Next, add the sugar, shredded coconut, coconut milk, whole milk, and a pinch of salt to the hydrated tapioca. Stir until all ingredients are well incorporated. Note that the sweetened condensed milk and the fresh coconut garnish are reserved for serving.

Grease a 7×10 inch (approx. 18 x 25 cm) rectangular pan with butter. Pour the mixture into the pan and refrigerate for at least 2 hours, or until firm.

Finally, slice the chilled tapioca pudding, drizzle generously with sweetened condensed milk, and sprinkle with fresh coconut. Serve your delicious, authentic Brazilian Tapioca Pudding chilled!
