Ingredients for Vatapá:
- 2 cups all-purpose flour
- 7 oz (approx. 200ml) coconut milk
- 2 cloves garlic, minced
- 1 yellow onion, finely diced
- 2 tomatoes, diced
- 3.5 tbsp (50ml) red palm oil (Azeite de Dendê)
- Seasonings to taste (such as Bahian seasoning blend, salt, black pepper, turmeric, or your favorite savory spices)
- 0.9 lb (400g) shrimp, peeled and deveined
- 4 cups (1 liter) whole milk
- Fresh parsley and scallions, chopped, to taste
How to make Vatapá:
- In a large, heavy-bottomed pot, heat the red palm oil.
- Add the diced onion and sauté until translucent.
- Add the minced garlic and cook until fragrant and lightly golden.
- Stir in the diced tomatoes and let them soften.
- As the vegetables sauté, incorporate your chosen seasonings.
- Once the mixture has reduced, add the shrimp. Sauté until they turn pink and opaque.
- Pour in the coconut milk and stir well to combine.
- Gradually add the milk and simmer over medium heat, stirring constantly, until the sauce thickens and takes on a vibrant color.
- Once it reaches your desired creamy consistency, stir in the fresh parsley and scallions. Cook for another 5 minutes, then remove from heat.
