Let’s dive into this deliciousness and master a soup that everyone will love.

Ingredients:

  • 2.2 lbs (approx. 1 kg) Russet or Yukon Gold potatoes
  • 6 cups (1.5 liters) water
  • 1/2 tablespoon salt
  • 1 tablespoon extra-virgin olive oil or vegetable oil
  • 3.5 oz (100g) bacon, finely diced
  • 6 oz (170g) smoked sausage (such as linguica or Spanish chorizo), sliced
  • 4.2 oz (120g) smoked sausage (kielbasa), diced
  • 1/2 cup yellow onion, finely grated or minced
  • 1 tablespoon garlic, minced
  • 2 cups kale, thinly sliced (chiffonade)
  • Salt and black pepper to taste

How to make the Ultimate Caldo Verde:

  1. Peel and dice the 2.2 lbs of potatoes. Boil them in the 6 cups of water with 1/2 tablespoon of salt until very tender.
  2. Transfer the cooked potatoes and the cooking liquid to a blender and blend for about one minute until you have a smooth puree. Set aside.
  3. In a large pot or Dutch oven, heat the oil over medium-high heat. Add the diced bacon and fry until golden brown and crispy.
  4. Add the sliced smoked sausage and kielbasa. Sauté for a few minutes until lightly browned.
  5. Stir in the onion and sauté until it begins to brown. Then, add the minced garlic and cook until fragrant and golden.
  6. Add the sliced kale and sauté for one minute until slightly wilted.
  7. Pour the potato puree into the pot and stir well to combine. Simmer over medium heat for about 15 minutes, stirring occasionally.
  8. Taste and adjust salt if necessary. Add a pinch of black pepper to taste. Your Caldo Verde is ready! Serve hot and enjoy!

Pro Tips:

To make your soup even more delicious, quality matters. Using high-quality bacon and smoked sausages will significantly elevate the flavor profile. Opt for fresh, artisanal products whenever possible.

For a smoother, more velvety texture, you can pass the boiled potatoes through a potato ricer or masher before blending. If you prefer a richer soup, feel free to use chicken or vegetable stock instead of water when boiling the potatoes.

Always taste as you go! Seasoning is a personal preference, so feel free to adjust the salt and pepper to suit your palate.

Prep time: Approx. 45 minutes.

Yields: 6 generous servings.

A Bit of History:

Caldo Verde is one of the most beloved traditional soups from Portugal. Originating in the Minho region, it’s a staple during celebrations and cold winters. While the original recipe relies on simple peasant roots—potatoes, collard greens or kale, olive oil, and slices of chouriço—it has evolved globally. In Brazil, it’s common to add bacon and various types of smoked sausages for extra depth.

Beyond being comforting, this soup is a nutritious powerhouse. Kale is an excellent source of Vitamin K, Vitamin C, and calcium, providing antioxidants in every spoonful.

Share this bowl of tradition with your loved ones. Nothing beats a hot cup of Caldo Verde on a cold night!
