Healthy and delicious, this sugar-free coffee cake will surprise you. Brew a fresh cup of coffee and get ready—it’s so good there won’t be a single crumb left!

Ingredients for this sugar-free coffee cake:

  • 3 eggs
  • 3 tablespoons melted butter
  • 1/2 cup strong brewed coffee (unsweetened)
  • 1/2 cup honey
  • 3 tablespoons unsweetened shredded coconut
  • 3 tablespoons psyllium husk
  • 1 1/2 cups almond flour or oat flour
  • 1 teaspoon baking powder

How to make this sugar-free coffee cake:

  1. In a mixing bowl, lightly beat the eggs just until uniform;
  2. Add the melted butter, coffee, and honey to the eggs and set aside;
  3. In another bowl, mix the dry ingredients well: shredded coconut, flour, and psyllium husk;
  4. Pour the dry mixture into the liquid ingredients and stir well until the batter is smooth and homogeneous;
  5. Gently fold in the baking powder;
  6. Bake in a preheated oven at 350°F (180°C) for 25 minutes;
  7. Your cake is ready! Now all that’s left is to enjoy it with a nice afternoon coffee.
