Got day-old rice in the fridge? Turn it into crispy, cheesy ham and rice fritters—the perfect grab-and-go breakfast or party snack.
Ingredients for Cheesy Ham & Rice Fritters:
- 3 cups cooked white rice, cold;
- 3 Tbsp unsalted butter;
- ½ cup whole milk;
- 3 Tbsp all-purpose flour;
- 1 cup shredded deli ham (or leftover holiday ham);
- 1 cup shredded mozzarella;
- ½ cup chopped scallions & fresh parsley mix;
- Salt to taste;
- 1 cup plain breadcrumbs;
- Oil for frying.
How to Make Cheesy Ham & Rice Fritters:
- Add rice, butter, milk and flour to a food processor; pulse just until combined—some grains should still be visible for texture;
- Transfer to a bowl and fold in ham, mozzarella and scallion-parsley mix;
- Season with salt, stir until a cohesive “dough” forms;
- Scoop 2-Tbsp portions, roll into balls, then roll in breadcrumbs;
- Heat 2 inches of oil in a heavy pot to 350 °F; fry fritters 3–4 min until deep golden;
- Drain on paper towels, serve hot or room-temp.
Flavor Twists:
