Cheesy Ham & Rice Fritters (Easy Leftover Rice Recipe)

Got day-old rice in the fridge? Turn it into crispy, cheesy ham and rice fritters—the perfect grab-and-go breakfast or party snack.

Ingredients for Cheesy Ham & Rice Fritters:

  • 3 cups cooked white rice, cold;
  • 3 Tbsp unsalted butter;
  • ½ cup whole milk;
  • 3 Tbsp all-purpose flour;
  • 1 cup shredded deli ham (or leftover holiday ham);
  • 1 cup shredded mozzarella;
  • ½ cup chopped scallions & fresh parsley mix;
  • Salt to taste;
  • 1 cup plain breadcrumbs;
  • Oil for frying.

How to Make Cheesy Ham & Rice Fritters:

  1. Add rice, butter, milk and flour to a food processor; pulse just until combined—some grains should still be visible for texture;
  2. Transfer to a bowl and fold in ham, mozzarella and scallion-parsley mix;
  3. Season with salt, stir until a cohesive “dough” forms;
  4. Scoop 2-Tbsp portions, roll into balls, then roll in breadcrumbs;
  5. Heat 2 inches of oil in a heavy pot to 350 °F; fry fritters 3–4 min until deep golden;
  6. Drain on paper towels, serve hot or room-temp.

Flavor Twists:

Swap ham for pepperoni, use a three-cheese blend, add diced bell pepper, or go vegetarian with spinach & feta. Great for breakfast, game-day or lunchboxes.
