Ingredients for Christmas ham with orange glaze:

  • 7–8 lb bone-in or boneless ham (your choice);
  • 1 large onion, minced very fine;
  • 1 cup extra-virgin olive oil;
  • Juice of 2 lemons;
  • Juice of 2 oranges;
  • 2 Tbsp kosher salt;
  • 5 garlic cloves;
  • 4 cups water;
  • 1 cup chopped fresh parsley & scallions.

How to make orange-glazed Christmas ham:

  1. First, blend all marinade ingredients until smooth;
  2. Score the ham and push the seasoning into every crevice;
  3. Place the ham in a covered container and refrigerate overnight;
  4. The next day, remove from fridge, tent with foil and roast 3 h. Uncover, baste with the pan juices;
  5. Return to the oven at 400°F (200°C) for 30 min until caramelized and ready to shine.
