Ingredients for Microwave Coconut Dulce de Leche Cake:
- 2 eggs;
- 2/3 cup milk;
- 4 tablespoons coconut flour;
- 2 tablespoons sugar;
- 1 tablespoon melted butter;
- 1 teaspoon baking powder;
- Dulce de leche to taste;
- Shredded coconut to taste;
How to make Microwave Coconut Dulce de Leche Cake:
- In a bowl, add the two eggs and whisk until combined;
- Next, stir in the milk;
- Now add the coconut flour and sugar, mixing well;
- Add the melted butter and mix;
- Add the baking powder and stir gently until dissolved;
- Grease a microwave-safe dish and pour in the batter;
- Microwave on high power for about 10 minutes;
- Let it cool slightly;
- Unmold if desired;
- Top with a generous layer of dulce de leche and sprinkle with shredded coconut.
