Ingredients for Microwave Coconut Dulce de Leche Cake:

  • 2 eggs;
  • 2/3 cup milk;
  • 4 tablespoons coconut flour;
  • 2 tablespoons sugar;
  • 1 tablespoon melted butter;
  • 1 teaspoon baking powder;
  • Dulce de leche to taste;
  • Shredded coconut to taste;

How to make Microwave Coconut Dulce de Leche Cake:

  1. In a bowl, add the two eggs and whisk until combined;
  2. Next, stir in the milk;
  3. Now add the coconut flour and sugar, mixing well;
  4. Add the melted butter and mix;
  5. Add the baking powder and stir gently until dissolved;
  6. Grease a microwave-safe dish and pour in the batter;
  7. Microwave on high power for about 10 minutes;
  8. Let it cool slightly;
  9. Unmold if desired;
  10. Top with a generous layer of dulce de leche and sprinkle with shredded coconut.
