Today for our afternoon coffee, we are going to prepare a very unique treat: Tangerine Peel Cake. Once you try it, you’ll want to make it all the time. It reminds many of a classic orange cake, but with a distinct, sophisticated citrus flavor profile all its own.
Ingredients for Tangerine Peel Cake:
- Peels from 3 to 4 medium tangerines (thoroughly washed);
- 1 cup granulated sugar;
- 2 cups all-purpose flour;
- 3 large eggs (separated);
- 1 tablespoon honey;
- 1/2 cup vegetable oil;
- 1 tablespoon baking powder;
- 3 to 4 cups water (for boiling peels).
How to make Tangerine Peel Cake:
- Place the cleaned tangerine peels and water in a saucepan over medium heat.
- Once it starts to boil, remove from heat. Let it cool slightly, then blend the mixture in a blender until smooth.
- Strain the liquid and set aside.
- In a clean blender, combine the egg yolks, sugar, honey, oil, and the tangerine peel liquid. Blend until well combined and set aside.
- In a separate bowl, beat the egg whites until stiff peaks form, and set aside.
- Whisk the baking powder into the flour. Gradually incorporate the liquid mixture into the dry ingredients.
- Once the batter is smooth, gently fold in the beaten egg whites until fully incorporated.
- Grease a cake pan and pour in the batter.
- Bake in a preheated oven at 350°F (180°C) for about 40 minutes.
