Vibrant Dragon Fruit Cake Recipe

Ingredients for the dragon fruit cake:

Cake Batter:

  • 1 medium red dragon fruit;
  • 3 cups all-purpose flour;
  • 1 ½ cups granulated sugar;
  • 3 tablespoons unsalted butter;
  • 3 large eggs;
  • 1 teaspoon baking powder;
  • ¾ cup water (approx. 200ml).

Glaze:

  • 1 can (14 oz) sweetened condensed milk;
  • 1 red dragon fruit, mashed into a purée;
  • A few drops of fresh lime juice.

How to make the dragon fruit cake:

  1. In a stand mixer, combine the eggs, sugar, and butter; mix well.
  2. Beat until smooth and creamy, then set aside.
  3. In a blender, process the peeled and chopped dragon fruit with the water until smooth.
  4. Add the flour and the dragon fruit liquid into the mixer bowl with the creamed egg mixture.
  5. Mix everything thoroughly with a spatula until the batter is creamy and well-combined.
  6. Gently fold in the baking powder.
  7. Pour the batter into a greased and floured cake pan.
  8. Bake in a preheated oven at 390°F (200°C) for about 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. For the glaze, mix the condensed milk, dragon fruit purée, and lime juice in a bowl until fully incorporated.
  10. Drizzle the glaze over the cooled cake and decorate with fresh fruit pieces if desired.
