The Best Brazilian Sausage Pie You’ll Ever Taste: Easy Recipe!

Savory pies are always a quick and easy way to enjoy a complete meal. Today, we’re preparing an incredibly tasty Brazilian Sausage Pie (torta de calabresa) that makes for the perfect main course or a special savory snack.

Ingredients for the Sausage Pie:

Filling:

  • 10.5 oz (approx. 300g) smoked Calabresa sausage (or smoked kielbasa), diced
  • Fresh parsley, chopped, to taste
  • 1 can (15 oz) sweet corn, drained
  • 2 Roma tomatoes, seeded and chopped
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced

Batter:

  • 1/3 cup (80ml) vegetable oil
  • 2 large eggs
  • 3/4 cup (180ml) whole milk
  • 1/2 cup (100g) heavy cream (or table cream)
  • 1 1/2 cups (approx. 180g) all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 3 tbsp (20g) grated Parmesan cheese
  • Dried oregano, to taste

How to Make the Sausage Pie:

Filling:

  1. In a large skillet over low heat, add the diced Calabresa sausage and sauté until it releases its own fat and begins to brown.
  2. Add the onion and garlic, sautéing until soft and fragrant.
  3. Stir in the tomatoes and sweet corn; cook for another 2 minutes.
  4. Remove from heat and stir in the chopped fresh parsley.

Batter:

  1. In a blender, combine the eggs, milk, oil, heavy cream, and salt.
  2. Blend well. With the blender running, gradually add the flour and baking powder. Blend for only about 10 seconds more—just enough to incorporate—then turn off the blender.

Assembly:

  1. Pour half of the batter into a greased and lightly floured baking dish.
  2. Spread the sausage filling evenly over the batter.
  3. Pour the remaining batter over the top.
  4. Sprinkle with a little extra Parmesan cheese and dried oregano (optional).
  5. Bake in a preheated oven at 390°F (200°C) for about 40 minutes, or until the top is golden brown and set.
  6. Serve warm and enjoy!

About Calabresa Sausage:

Calabresa sausage is a cured, smoked sausage seasoned with pepper flakes. It was developed in Brazil, specifically in the Bixiga district of São Paulo, by Italian immigrants inspired by the traditional Salsiccia di Calabria from Southern Italy. It is a staple ingredient in Brazilian pizzerias and family kitchens.
