Ingredients for Homemade Natural Yogurt:
- 1 quart (about 1 liter) whole milk;
- 1 container (approx. 6 oz or 170g) plain yogurt (with live cultures).
How to Make Natural Yogurt:
- In a deep saucepan, add the whole milk over low heat. Let it warm up until it starts to foam (do not let it boil). If you have a thermometer, the ideal temperature is 195°F (90°C). Once it starts to foam, turn off the heat;
- Transfer the milk to a glass container to cool down;
- When the milk is lukewarm (warm to the touch, not hot), stir in the plain yogurt, which should be at room temperature (take it out of the fridge about 20 minutes before use);
- Mix the yogurt and milk thoroughly;
- Cover the container with plastic wrap and then wrap it with a thick kitchen towel to keep it insulated and dark;
- Place it in a spot free from drafts. I suggest placing it inside your oven (with the oven off);
- Let it sit for 8 to 12 hours;
- After this time, it will have reached a creamy yogurt consistency, yielding about 1 quart;
- Store it in a clean, dry airtight container in the refrigerator and use it in your favorite recipes.
