Bread Dough:

  • 1/4 cup plus 1 tablespoon sugar;
  • 1 packet (approx. 2 1/4 tsp) active dry yeast;
  • 2 large eggs;
  • Zest of 1 orange;
  • 4 tablespoons (1/2 stick) unsalted butter, softened;
  • 4 cups all-purpose flour;
  • 1 teaspoon salt;
  • 3/4 cup plus 1 tablespoon warm milk.

Bread Filling:

  • 3/4 cup chopped dried apricots;
  • 3/4 cup chocolate chips;
  • 1/2 cup apricot or orange jam;

Topping:

  • 2 tablespoons sugar;
  • 1/4 cup almond flour;
  • 1/4 cup sliced almonds;
  • 1 egg white;
  • Pearl sugar, to taste.

How to Make Colomba Pasquale:

  1. In a large bowl, whisk together the flour and salt. Set aside.
  2. In a separate bowl, mix the warm milk, sugar, and active dry yeast.
  3. Stir until the yeast is completely dissolved.
  4. Add the eggs and orange zest to the milk mixture, whisking well to combine.
  5. Add the liquid mixture to the flour mixture and stir until a homogeneous dough forms.
  6. Incorporate the butter, kneading until the dough is well-combined and elastic.
  7. Cover the bowl with a damp cloth and let it rest in a warm place for about 1 hour, or until the dough has doubled in size.
  8. While the dough rises, prepare the filling.
  9. In a bowl, mix the jam, chopped apricots, and chocolate chips.
  10. Once risen, divide the dough into two equal parts.
  11. Roll each part into an oval shape, about 1/2 inch thick.
  12. Spread the filling over one half and cover with the other half of the dough.
  13. Place the dough into a Colomba mold (or a standard loaf pan) and let it rest for another 30 minutes.
  14. While it rests, prepare the topping: in a small bowl, whisk the egg white, sugar, almond flour, and sliced almonds.
  15. Brush the dough with the topping mixture and sprinkle with pearl sugar to taste.
  16. Bake in a preheated oven at 350°F (180°C) for about 40 to 45 minutes, or until the Colomba is golden brown and cooked through.
