- 1.1 lbs (approx. 500g) shredded chicken;
- 1 medium onion, diced;
- 1 large carrot, diced;
- 1 can of corn (drained);

- Black pepper to taste;
- 1 cup cream cheese or Brazilian-style requeijão;
- Puff pastry sheets;
- 1 egg yolk.
How to make chicken puff pastry:
- Preheat the oven to 350°F (180°C) before starting the preparation;
- In a pan, heat the olive oil over medium heat;
- Add the onion and sauté until translucent;
- Add the diced carrot and sauté for a few more minutes until it softens slightly;
- Add the shredded chicken to the pan and season with salt and black pepper to taste;
- Mix well to incorporate the ingredients;
- Add the corn and mix again;
- Stir in the cream cheese until you get a smooth, creamy mixture;
- Turn off the heat and set aside;
- Roll out the puff pastry on a smooth, clean surface;
- Cut into 2 rectangles large enough to hold the filling;
- Place a portion of the chicken filling in the center of one pastry rectangle;
- Cover with the second rectangle, forming a pocket, and press the edges with your fingers or a fork to seal;
- Place the pastry pocket on a baking sheet lined with parchment paper;
- In a small bowl, whisk the egg yolk and brush gently over the surface of the puff pastry for a golden finish;
- Bake in the preheated oven for 20 to 25 minutes, or until the pastry is golden and crispy;
- Remove from the oven and let it cool for a few minutes before serving;
