Ingredients for chicken puff pastry:

  • 1.1 lbs (approx. 500g) shredded chicken;
  • 1 medium onion, diced;
  • 1 large carrot, diced;
  • 1 can of corn (drained);
  • 2 tablespoons extra-virgin olive oil;
  • Salt to taste;
  • Black pepper to taste;
  • 1 cup cream cheese or Brazilian-style requeijão;
  • Puff pastry sheets;
  • 1 egg yolk.

How to make chicken puff pastry:

  1. Preheat the oven to 350°F (180°C) before starting the preparation;
  2. In a pan, heat the olive oil over medium heat;
  3. Add the onion and sauté until translucent;
  4. Add the diced carrot and sauté for a few more minutes until it softens slightly;
  5. Add the shredded chicken to the pan and season with salt and black pepper to taste;
  6. Mix well to incorporate the ingredients;
  7. Add the corn and mix again;
  8. Stir in the cream cheese until you get a smooth, creamy mixture;
  9. Turn off the heat and set aside;
  10. Roll out the puff pastry on a smooth, clean surface;
  11. Cut into 2 rectangles large enough to hold the filling;
  12. Place a portion of the chicken filling in the center of one pastry rectangle;
  13. Cover with the second rectangle, forming a pocket, and press the edges with your fingers or a fork to seal;
  14. Place the pastry pocket on a baking sheet lined with parchment paper;
  15. In a small bowl, whisk the egg yolk and brush gently over the surface of the puff pastry for a golden finish;
  16. Bake in the preheated oven for 20 to 25 minutes, or until the pastry is golden and crispy;
  17. Remove from the oven and let it cool for a few minutes before serving;
  18. Enjoy!

Pro Tip:

If you like, you can make small decorative cuts on the surface of the dough before baking.

Did you know?

This savory chicken pastry is often referred to as a “Chicken Wellington,” a twist on the famous British “Beef Wellington.” It is believed the original dish was created in honor of the Duke of Wellington, a 19th-century military hero, while this chicken version emerged later as a more accessible and versatile alternative.
