Traditional Brazilian Brigadeiros are a universal favorite, aren’t they? It’s hard to find someone who doesn’t love them. While it’s a simple recipe, there are a few secrets to getting that perfect, creamy texture. Today, we’re sharing a straightforward, no-fuss way to make this iconic Brazilian treat. Let’s get started!
Ingredients for Traditional Brigadeiros:
- 1 can (14 oz) sweetened condensed milk
- 4 tablespoons unsweetened cocoa powder (50% or 70% cacao recommended)
- 1 tablespoon unsalted butter
- Chocolate sprinkles (jimmies), as needed
How to Make Traditional Brigadeiros:
- In a saucepan (preferably non-stick), add the sweetened condensed milk and the cocoa powder.
- Cook over medium heat, stirring until the cocoa is fully incorporated into the milk. Once smooth, stir in the butter.
- Once the mixture starts to bubble, reduce the heat to low. Continue stirring constantly for about 5 minutes until the mixture thickens and pulls away from the bottom of the pan.
- Turn off the heat and transfer the mixture to a plate or bowl lightly greased with butter to cool.
- Once it has cooled to room temperature and is easy to handle, butter your hands and roll into small, bite-sized balls.
- Place the chocolate sprinkles on a shallow plate. Roll each brigadeiro in the sprinkles until completely covered.
- Place them on a tray or in a container, making sure they don’t stick to each other, and refrigerate for a few minutes to firm up.
- Serve and enjoy!
Pro Tip:
To get the perfect traditional brigadeiro, high-quality ingredients are key. Choose a good brand of sweetened condensed milk, high-quality cocoa powder, and real butter. Always cook over low heat and stir constantly to prevent burning and to ensure that signature silky, creamy consistency.
Fun Fact:
The brigadeiro is an iconic Brazilian sweet. It was created in the 1940s during the presidential campaign of Brigadier Eduardo Gomes, a military candidate. The treat was served at campaign fundraising events and became known as “the Brigadier’s candy.” Over time, the name stuck, and it has become one of the most beloved and traditional desserts in Brazil.
