Ingredients for Low-Carb Chayote Caldo Verde:
- 1 tbsp cooking fat (coconut oil or lard)
- 12 oz (approx. 350g) smoked sausage (such as linguica or andouille), cubed
- 3 cloves garlic, minced
- 1 stalk celery, chopped
- 1 onion, chopped
- 2.2 lbs (1kg) chayote squash, peeled and cut into large cubes
- Salt and pepper to taste
- A pinch of nutmeg (optional)
- 4 cups (1 liter) homemade vegetable broth (or water)
- 7 oz (200g) collard greens, thinly sliced
Instructions:
- Heat the cooking fat in a large pot and add the cubed sausage. Sauté until browned, then remove and set aside.
- In the same pot, sauté the garlic, celery, and onion until fragrant.
- Add the cubed chayote, season with salt, pepper, and nutmeg. Pour in the vegetable broth to cover.
- Cook the chayote until fork-tender. Remove from heat and use an immersion blender (or standard blender) to puree until smooth.
- Adjust the consistency with the reserved broth if necessary.
- Stir in the browned sausage.
- Finish by folding in the thinly sliced collard greens and stir until they wilt.
