Zucchini Lasagna: A Delicious Low-Carb Alternative

We already have several lasagna options on our site, and this is another variation of this wonderful dish that everyone enjoys in at least one version. Our suggestion for today is Zucchini Lasagna. Let’s get to the recipe!

Ingredients for Zucchini Lasagna:

  • 4 large zucchinis;
  • 7 oz (200g) mozzarella cheese, sliced;
  • 7 oz (200g) turkey breast, sliced;
  • 14 oz (400g) lean ground beef;
  • 1 jar (approx. 24 oz) tomato sauce;
  • 1/2 onion, finely chopped;
  • 2 cloves garlic, minced;
  • Salt to taste;
  • “Tempero Baiano” (or a mix of cumin, oregano, and black pepper) to taste;
  • Paprika to taste;
  • Chopped fresh chives to taste;
  • Fresh basil leaves to taste;
  • Extra-virgin olive oil.

How to make Zucchini Lasagna:

  1. In a pan, heat a drizzle of olive oil.
  2. Add the onion and sauté until translucent.
  3. Add the minced garlic and sauté for another minute, being careful not to burn it.
  4. Add the ground beef and season with salt, “Tempero Baiano”, paprika, and chives to taste.
  5. Mix well and brown the meat.
  6. Once browned, stir in the tomato sauce, bring to a simmer, then remove from heat and set aside.
  7. In a large pot, bring salted water to a boil.
  8. Meanwhile, slice the zucchinis into medium-thickness strips.
  9. Blanch the zucchini slices in the boiling water for about 3 minutes, so they stay firm.
  10. Drain the slices and begin the assembly.
  11. In a baking dish, spread a layer of sauce, followed by a layer of zucchini, mozzarella, and turkey breast. Repeat the layers until you run out of ingredients or reach the top.
  12. Finish with a final layer of mozzarella cheese.
  13. Bake in a preheated oven at 350°F (180°C) until the cheese is melted and bubbly.
  14. Remove from the oven and top with fresh basil leaves. Enjoy!

Variations:
