Friday is here! The weekend calls for a more elaborate recipe, so today we’ll prepare a Feijão Tropeiro, one of those dishes that brings the whole family around the table. This is an easy version packed with flavors to complete your lunch. Plus, it’s a meal almost everyone enjoys and is very satisfying due to its variety of ingredients and seasonings. Let’s get cooking!
Ingredients for Feijão Tropeiro:
- 3 Eggs;
- 5 Minced garlic cloves;
- 1 Sliced large onion;
- Salt to taste;
- Black pepper to taste;
- 2 Cups of cassava flour;
- Parsley and green onions to taste;
- 1 Bundle of kale;
- 1 1/2 Cups of salt pork;
- 1 1/2 Cups of bacon;
- 1 1/2 Cups of white beans;
- 4 Tuscan sausages;
How to prepare Feijão Tropeiro:
- Start by cooking the beans;
- Next, slice the kale into thin strips;
- In separate pans, fry the salt pork and bacon;
- Transfer them to a larger pot and set aside;
- Now sauté the onion in a skillet and add it to the pot with the pork and bacon;
- Then sauté the garlic and add it to the pot as well;
- Take the chopped kale and gently sauté it with the other ingredients in the pot;
- In the skillet used for the bacon, use the fat to lightly fry the cassava flour;
- Add the cassava flour to the pot with the other ingredients;
- Once the beans are cooked, drain the water and add them to the pot;
- Add salt and black pepper to taste, mix everything, and let it cook on low heat for about 5 minutes to blend the flavors;
- If desired, add parsley and green onions at the end, transfer to a serving dish, and enjoy!
