Ingredients:

  • 3.5 oz (100g) textured soy protein (TVP)
  • 2 cups (500ml) water
  • 1/2 lemon, juiced
  • 1 tablespoon extra-virgin olive oil
  • 1/2 medium onion, minced
  • 2 cloves garlic, minced
  • 3 tablespoons mayonnaise
  • 2 tablespoons cream cheese or sour cream
  • Salt to taste
  • Fresh parsley and scallions, chopped, to taste
  • 1 large egg
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 small onion, finely diced
  • 2 tablespoons fresh parsley and scallions, chopped
  • 1/3 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • Butter (for the bun)
  • Hamburger buns
  • Lettuce and tomato (optional)

How to Prepare the Soy Burger:

  1. Start by hydrating the soy: boil 2 cups of water, add the lemon juice and the 3.5 oz of textured soy protein. Let it hydrate for 10 minutes, then drain well and discard the water.
  2. In a skillet, heat a drizzle of olive oil and sauté the 1/2 medium onion and 2 minced garlic cloves until golden. Set aside.
  3. In a blender or food processor, combine the mayonnaise, cream cheese, a pinch of salt, and the sautéed onion and garlic mixture. Blend until smooth, then stir in fresh parsley and scallions. Refrigerate until serving.
  4. After hydrating the soy, squeeze it tightly to remove excess moisture. In a bowl, mix the soy with the egg, smoked paprika, salt, finely diced onion, fresh parsley and scallions, black pepper, and flour. Mix thoroughly.
  5. Line a burger press or a small ring mold with plastic wrap, add the soy mixture, and press firmly to form the patties. Place in the freezer for 10 minutes to help them firm up.
  6. Toast the buns in a skillet with a little butter until golden brown.
  7. In the same skillet, heat a drizzle of oil over medium-high heat. Remove the plastic wrap from the patties and fry until golden brown on both sides.
  8. Assemble your burger with lettuce, tomato, and the prepared creamy garlic-onion sauce.
